Ramadan 1 - Asam Pedas Ikan Debam

 



Salaam semua kawan kawan....semalam dah bermula kita berpuasa, Ayu harap semua berada dalam keadaan sihat & berbahagia disamping org org yg tersayang. Semalam ayu sekeluarga berbuka nasi dgn lauk asam pedas. My mom is back in the kitchen, Alhamdulilah....so semalam my mom masak her most famous diah...Asam Pedas, so here goes the recipe:

Asam Pedas

Bahan utk dikisar
!0 - 20 btg cili kering (direndam hingga lembut)
4 - 5 ulas bawang besar
6- 7 ulas bawang putih
sedikit belacan
1tsp serbuk kunyit

segenggam asam
2 cawan air
garam
ajinamoto
minyak

Cara :

1. Tumis bahan yang dikisar hingga garing.

2. Bubuh garam, ajinamoto dan gaul.

3. Masukkan asam yang sudah dicampur ke dalam air, gaul.

4. Biarkan mendidih, masukkan ikan dan biarkan hingga ikan masak (kecilkan api)

5. Kalau mahu tambah pedas boleh masukkan lada hitam yang dikisar.

Bingka Ubi


Malam ini terlebih rajin sebab dah lama tak post apa apa.....so malam ini nak share lagi satu recipe...Bingka Ubi. Actually selama ini tau makan aje, bila dah ada orang mintak buatkan kelam kabut sekejap cari resepi tapi alhamdulilah my mom ada simpan resepi bingka ubi yang sedap dan senang, tak perlu timbang timbang....hehehehehe

Bingka Ubi

1 kilo ubi parut - ditos dahulu, buang air yang ditos itu dan ambil kanji ubi
sedikit kelapa parut tanpa kulit
2 cawan gula pasir
100ml santan
1 tsp garam
3 tbsp minyak sapi
warna kuning

Cara :

1. Lenserkan loyang dengan mentega and panaskan oven pada suhu 160c.

2. Masukkan ubi parut, kelapa parut, gula dalam mangkuk dan gaul rata.

3. Kemudian masukkan santan dan gaul.

4. Akhir sekali bubuh warna kuning dan gaul rata.

5. Tuang ke dalam loyang yang sudah dilenser dengan mentega.

6. Bakar selam 40 minit

Yong Tau Foo


Hari ini masak simple aje, Yong Tau Foo. Mula mula nak masak fishball soup je, bila cuci cuci mata kat supermarket ternampak pulak bahan bahan yong tau foo, terus dapat ilham. Pulak my hubby memang suka lauk lauk yang ber-soup....jadi senang la sikit tugas hari ini....

Yong Tau Foo ala Ayu

2 btg cilli merah - dihiris
1 ulas bawang besar - dihiris
2 - 3 ulas bawang putih - dicincang halus
1 kuib stock ayam
1 liter air
minyak utk menumis

1 pkt fishball mentah
10 biji telur puyu - direbus
1 keping tahu lembik
sayur kailan
bahan bahan yong tau foo - mengikut selera masing masing

Cara :

1. Panaskan minyak lalu tumis bawang putih. Kemudian masukkan bawang besar dan tumis hingga wangi, masukkan cilli mkerah.

2. Masukkan fishball dan gaul rata.

3. Masukkan air dan biarkan hingga mendidih.

4. Kemudian masukkan stock (citarasa masing masing) dan gaul rata.

5. Masukkan semua bahan bahan yong tau foo, telur puyu dan tahu lembik. Bubuh garam jika perlu.

6. Akhir sekali masukkan sayur kailan dan terus padam api.

7. Siap dihidang dengan nasi panas

I'm Back

Hi all....did you guys miss me??? LoL....i sure do miss blogging. Well, i was unable to go online as my pc suddenly went dead on one fine morning...sent it for repair and now its alive (and so are my girls when they are able to log on to their fb account...haish)
Lately i have not been experimenting any new recipe as i am quite tied up with the supplying of curry puffs and roti boyan...time is really not in my favour for these past months...but i sure do hope to be back real soon with something yummy to share with everyone....so i bid everyone good nite for now and will be back soon.....

Mega Concert Ungu @ Indoor Stadium 24/4/2010




Finally the day came...tunggu sikit punya lama nak tengok concert Ungu, my favourite band. Pegi concert tu dgn my fren yg hip habis, bergaya sakan dia. We really enjoyed ourselves that nite...Pasha was great on stage (as always). After the concert we went backstage for a light refreshment and finally photo taking with the band....ini kali kedua dapat bergambar dgn all 5 of them....dgn si kekasih gelap tu ada la lebih dari 3, 4, 5......hehehehehehehe......rasa penat betul hari tu coz dari pagi hantar kuih, lepas tu pegi last minute shopping baju nak pakai for the concert dah tu hantar my girls to my bro in law's house dah tu hujan lebat pulak sampai tak blh nampak road...dari rumah bro in law pegi fetch my fren then finally we headed for the indoor stadium...the concert was really awesome and the organizers are also great, they did a really fine job...really hope that they will be doing something real soon...so here are some pics to share.....

Cookie Monster

 




Salaam semuanya, berjumpa lagi kita di blog yg tak seberapa ini....hari ini seperti biasa adalah resepi untuk berkongsi dengan teman teman semua....hari ini ayu buatkan my girls they favourite chocolate chip cookie...ini reward actually...hehehhee....so here goes the recipe:


Ingredients:

150g unsalted butter
1/4 cup soft brown sugar
1/3 cup caster sugar
1 egg yolk
1 1/2 cup self raising flour
1 tsp vanilla extract
2 cups chocolate chips


Method:

1. Preheat oven to moderate 180c. Line biscuit tray with baking paper.

2. Beat butter and both sugars and yolk until light and creamy.

3. Transfer mixture to a large mixing bowl, add flour and two-thirds of the chocolate chips. Using a metal spoon, stir until ingredients are just combined.

4. Using finger, press mixture together to form a soft dough. Roll one tbsp of mixture at a time into a ball.

5. Press remaining chocolate chips firmly on top of balls. Arrange on tray, allowing room for spreading. Bake for 15 mins or until crisp and lightly browned.
(i used m&m's instead of chocolate chips on top)

Pulut Inti



Hello hello all.....it's been days since i upload something here...been very busy lately with orders of Pulut Kuning...finally today i have some free time to share something with everyone....today i want to share a very simple traditional kuih...Pulut Inti...

Ingredients
1 1/2 cups glutinous rice
1/2 tsp salt
150ml water coconut milk
1 pandan leaf, tied into a knot

Coconut filling
100g palm sugar or gula Melaka
1/4 cup water
1 pandan leaf, knotted
1 cup grated coconut

Banana leaves - cut into 4 x 6 inch, blanched in hot water to soften for folding

Directions
Wash the glutinous rice and strain. Place in a shallow heafproof dish. Mix salt and coconut milk and pour over the rice. Add pandan leaf in the rice and steam till it is cooked for about 20-25 minutes. Check from time to time and stir. Remove from heat.

Coconut filling
Dissolve sugars and simmer until liquid starts to thicken and become syrupy. Add grated coconut and pandan leaf. Cook till the mixture is soft and dry about 10 to 15 minutes. Most of the liquid should have evaporated. Remove from heat and let it cool.

Place 1 tablespoon cooked glutinous rice on banana leaf. Add 1 teaspoon filling on top of the rice. Fold the leaf on either side and tuck both ends under, to enclose the rice, ensure that the top is slightly open to show a bit of the filling.

Fruit Tart

 

I was asked to do this for my hubby's niece engagement...this was one of the item for exchange between the couple.....i had never done the tarts this big coz usually my tarts are bite size....so i did something very simple with the help from my hubby of course...he is so much better at deco & crafty things than me...lol...



Tart base
1 kilo flour
500g butter
1 egg
2 tbsp cold water

Custard
2 tbsp custard powder
1 tbsp sugar
250ml fresh milk
1 egg

Fruits:
As your desire

2 tbsp apricot glaze
2 tbsp hot water (mix with the glaze)

Method :

(For the tart base)
1. Mix the flour and butter till it become like breadcrumbs. Then add in the egg, mix well.

2. Finally the cold water. Mix thoroughly. Ready to use

3. Mould it in any tart shell as desired

4. Bake blind till golden brown.

Custard:

1. Mix all ingredients into a saucepan.

2. Over small flame whisk till mixture thickens.

3. Pour into a piping bag and let it cool.

Fruit Tart:

1. Pipe in the custard into the tart base.

2. Arrange the fruits as desire.

3. Glaze with apricot gel.

4. Ready to serve.

Udang Goreng Kunyit

 


Hellooo helllooooooo.....Akhrinya dapat jugak update blog ni, penat betul last weekend sebab baru balik dari KL...trip kali ini my girls & hubby tak ikut coz i tolong my parents bawak rombongan pergi TV3...seronok jugak la pegi sana, untuk ikut rancangan Al-Kuliyyah bersama Ustaz Fauzi Mustapa & Dato Hassan Din....Live show pulak tu, so dapat la tengok cara cara dia orang buat rancangan Live....bila nak keluar dari bangunan terserempak dengan Amin Hayat salah seorang pembaca berita TV9...tapi kelam kabut tak sempat nak bergambar...
Anyway, dah balik dari tugas kena lah balik asal jadi ibu rumahtangga sepenuh masa...antara tugasnya ialah memasak untuk keluarga....so hari ini ayu masak lauk yg paling mudah di dunia...hehehehhe...lauk ini ialah antara yang pertama ayu belajar dengan my mom masa anak dara dulu...senang sekali...my anak dara pun dah boleh masak lauk ini...so here goes the recipe:


Udang Goreng Kunyit

Bahan:

500g udang - buang kepala & kopek separuh kulitnya, tinggalkan bahagian ekor
1 biji bawang besar - potong bulat
2 batang cili merah - hiris
2 sudu teh serbuk kunyit
garam & seburk perasa
minyak untuk mengoreng


Cara-caranya :

1. Panaskan minyak di dalam kuali.

2. Campur semua bahan ke dalam mangkuk dan raul rata.

3. Masukkan ke dalam kuali dan goreng hingga udang jadi kemerahan.

4. Bubuh garam & serbuk perasa. Gaul rata.

5. Siap dihidang dengan nasi panas.

Kuih Bakar (terlebih bakar...hehehehehe)



Salaam semua....memandangkan besok ayu nak ke KL, malam tadi buat kuih bakar untuk buat bekal...resepi ini dapat dari blog Encik Mat Gebu....very lemak & lembut betul kuih bakar ini...I cut & paste je....thank you ye Encik Mat Gebu.....


BAHAN-BAHANNYA :-)
2 cawan tepung gandum
3 biji telur gred A
600 ml santan
250 ml jus pandan (kisar 4 -5 helai daun pandan dengan 200 ml air, perah dan tambah air untuk mendapatkan 250 ml)
Sedikit pewarna hijau
1 cawan gula
1/2 camca teh garam
2 camca besar minyak sapi, dicairkan (resipi asal guna mentega) / I used oil
Bijan secukupnya untuk ditabur - Omit this one coz my girls don't like it

CARA MEMBUATNYA :-)

1. Panaskan oven pada suhu 200C. Lenser tin (4 x 8 x 3) inci dengan mentega, alas dengan aluminiun foil dan lenser juga aluminium foil tadi. Biar berlebih sikit dibahagian kanan dan kiri tin, supaya senang nak keluarkan kuih bila masak nanti. Ketepikan.
2. Satukan semua bahan2 di atas kecuali bijan, dan kacau dengan whisk hingga larut dan halus atau masukkan dalam blender dan kisar halus. Tapis adunan dan ketepikan.
3. Panaskan tin dalam ketuhar selamat 5 minit. Berhati2 keluarkan tin dan curah no. 2 ke dalam tin dan bakar kembali. Lepas 10 minit, keluarkan kuih tadi dan tabur bijan rata2.
4. Sambung membakar selama 40 - 50 minit lagi hingga permukaan kuih keperangan dan sedikit berkerak. Bila masak, longgarkan tepi kek dengan pisau dan biar sejuk sepenuhnya dalam tin. Potong dan hidangkan....

Easy Banana Cake

 


I saw Mamaifami did the banana cake so i thot of doing it using the recipe from her blog but then i realized i didn't have any ovalette left. Hampa hatiku, anything to do with banana is my favourite...then cari la online for any easy banana cake recipe....and akhirnya jumpa jugak ..http://www.bestrecipes.com.au
It is truly easy, just mix and then ready to bake....you don't even need to use your beater....so here goes the recipe.....

125g butter
3/4 cup sugar
1 tsp vanilla essence
1 egg
2 ripe bananas - mashed
1 1/2 cup self raising flour
1/4 cup milk

Method :
1. Melt butter, sugar & vanilla essence ina medium sized saucepan.

2. Add mashed bananas and stir thorough until just blended.

3. Add egg and mix well.

4. Sift in flour.

5. Add milk and mix lightly.

6. Bake at 170c for 40 mins.

Pasta Pizza


Helloooooo all....a new week has arrived again...time flies so quick and march is ending real soon while i feel i have not done much yet in life...hmmmmm, maybe i'm taking it toooooooo slow...heehehehhe.
Anyway, yesterday i tried this recipe that i found in a book that i borrowed from the library - 'Easy Everyday Cooking'.....this pasta pizza is really unique and easy to do so here goes the recipe:

5 oz dried cocksrew pasta
1 beaten egg
1/4 cup milk
2 tbsp parmesan cheese
8 oz ground beef
1/3 cup chopped onion
1 small glove garlic - minced
1 (14 oz) can italian - style stewed tomatoes - ( i used instant pasta sauce)
1 cup green / yellow / red capsicum - cut into 2 inch stripes
1/2 tsp italian seasoning - crushed (i used crushed dried oregano)
1/2 cup slice mushroom
1/4 tsp crushed red pepper
1 cup shredded mozarella cheese

Method for pasta crust :
1. Cook the pasta as directed on the package and drain.

2. For pasta crust, in a large bowl combine egg, milk and parmesan cheese. Stir in cooked pasta. Spread pasta mixture evenly in a greased 12 inch pizza pan. Bake in a 350C for 20 mins. (i used a casserole dish)

3. Meanwhile, in a large skillet. Cook meat, onion and garlic until meat is brown. Drain off fat. Stir in undrained tomatoes, capsicum and italian easoning. Brin to boiling, reduce heat. Simmer uncovered for 10 - 12 mins or until capsicum is crip tender and most liquid is evaporated. Stir in mushrooms and crushed pepper.

4. Spoon the meat mixture over the pasta crust. Sprinkle with mozarella cheese. Bake for 10 - 12 mins until pizza is heated thoroughly or cheese has melted.

Mee Hong Kong My Mummy

Akhirnya.....dah boleh upload gambar...yahoooooooooo. Hari ini menu mee hong kong special my mom. Simple je dish ni,kalau bulan puasa & musim raya mesti ada menu ini...

Bahan :

500g mee kuning
1 ikat sawi -
100g daging (direbus, potong nipis & simpan air rebusan)
200g udang - buang kulit & tinggalkan bahagian ekor
2 keping fish cake - potong nipis
2 sudu besar sos tiram
2 sudu kecil tepung jagung (campur sedikit air)
garam secukup rasa (jika perlu)

Bahan untuk rencah (ditumbuk)
4 ulas bawang putih
1 ulas bawang besar

cara:
1. Panaskan minyak dan tumis bawang putih & bawang besar yg telah ditumbuk.
2. Bila sudah naik bau masukkan udang, bila udang sudah masak masukkan daging & sedikit air rebusan daging tadi.
3. Masukkan sawi dan fish cake. Kemudian masukkan sos tiram.
4. Masukkan mee dan gaul rata semua bahan. Curah tepung jagung yg dicampur air. Gaul lagi untuk ratakan tepung pada mee. Jika kurang pekat tambah lagi sedikit tepung jagung.
5. Bubuh garam (sikit aje) jika perlu.
6. Siap untuk dihidangkan bersama lada jeruk.

Kway Teow Goreng


Salaam semua...sekejapnya dah datang hari sabtu lagi...hari ini tak masak berat berat sebab kat rumah cuma ada me & my girls....so goreng mee aje...and my favourite kway teow goreng....so here goes:

Bahan A

500g kway teow - dibasuh sedikit dgn air
250g udang
150g taugeh
3 keping fishcake - potong nipis
2 sudu makan kicap manis
2 sudu makan tomato sause
2 sudu makan chilli sauce
minyak untuk mengoreng

Bahan B (semua dikisar)
250g cilli kering
2 ulas bawang besar
6 ulas bawang putih
sedikit belacan

Cara-cara:

1. Panaskan minyak. Masukkan bahan bahan yg sudah dikisar. Tumis hingga garing.

2. Bila sambal sudah garing, bubuh garam & sedikit gula. Gaul rata.

3. Masukkan udang dan gaul hingga masak. Kemudian masukkan fish cake, gaul rata.

4. Masukkan kway teow. Gaul hingga sebati dan masukkan kicap, tomato sauce, chilli sauce dan gaul hingga rata.

5. Akhir sekali masukkan taugeh. Gaul rata dan padam api. Siap utk dimakan.

Rendang Daging & Roti Prata






Hello semua....hari ini hujan lebat kat kawasan rumah ayu, sejuk rasanya. Hari ini memandangkan my hubby off so i masak lebih sikit, today's lunch menu is Rendang Daging style Padang. Roti Prata tu pulak ayu ambil resepi dari Kak Ummi Kuantan..mmg best dan lembut roti prata itu....so here goes the resepi for the rendang daging:

Bahan Bahannya
A
1/2 kilo daging - potong kecil
1 1/2 paket santan

B (dikisar)
10 btg cilli hidup (kalau nak pedas tambah cili padi)
2 ulas bawang besar
4 ulas bawang putih
sebesar ibu jari halia, lengkuas & kunyit hidup

C
1 ulas bawang besar - hiris nipis
2 batang serai - dititik
daun kunyit
daun limau

Cara

1. Panaskan minyak dah tumis bawang yg dihiris. Bila layu masukkan bahan yg telah dikisar, dan biarkan hingga garing.

2. Masukkan daun limau, daun kunyit, serai dan daging. Gaul rata.

3. Masukkan santan dan gaul. Masak hingga daging empuk, baru bubuh garam.

4. Biarkan atas api yg kecil hingga terbit minyak.

5. Siap dihidang.





Yang ini resepi Roti Prata dari Kak Ummi Kuantan:

Bahan:-
3 cawan tepung gandum
1 cawan air sejuk
2 sudu besar susu pekat manis
1 sudu kecil garam
1 biji telur
1 sudu besar marjerin/butter
sedikit marjerin/butter/minyak untuk sapuan

Cara Membuat:-
Campurkan air, susu, garam, marjerin dan telor. Masukkan ke dalam tepung dan uli selama 25 minit sehingga licin. Tambah sedikit tepung lagi kalau terlalu lembik. Bulat2 kecil sehingga habis kemudian sapukan sekeliling doh dengan marjerin.butter/minyak supaya tidak melekat antara satu sama lain.
Simpan dalam bekas tertutup dalam fridge sekurang-kurangnya 8 jam. Tebar (kalau blh la) kalau tak pun Ayu ikut cara Kak Ummi...tarik tarik aje dan goreng.

Bubur Cha Cha




Ini my favourite....bubur cha cha, Tapi ayu suka tambah nangka...nangka itu mesti masukkan last jadi tak jadi terlalu lembik.

Bahan bahannya :

500ml santan
2/3 cawan gula
1 biji keledek - kopek kulit dan potong kecil kecil
1 paket nangka - potong kecil kecil
1 paket jeli bubur cha cha


Cara cara:
1. Rebus jeli bubur cha cha hingga kembang,angkat & tos.

2. Masukkan santan & keledek ke dalam periuk, buka api kecil. Masak hingga keledek empuk

3. Masukkan gula & sedikit garam. gaul rata.

4. Massukkan nangka & jeli yang telah di rebus tadi.

5. Gaul rata dan siap di hidang sejuk ataupun panas.

Inilah cara ayu menbuat bubur cha cha....lain orang pasti lain caranya tapi tak salahkan kalau kita semua berkongsi cara & teknik masing masin......

Stir Fry Fettuccine

Ini kegemaran my daughter yg sulung,Afiqah....she just loves pasta. Hari ini dah mula term break so apalagi macam macam la si anak dara ni minta...since today just she & i kat rumah we had this stir fry fettuccine untuk lunch:

Bahan

1/2 paket fettuccine
3/4 botol sos pasta (Ayu gunakan pasta sauce istant)
100g daging cincang
50g sayur campur- (mixed vegetables)
1/2 labu bawang besar - hiris nipis
2 sudu makan chilli sauce
sedikit garam


Cara - cara
1. Panaskan air dalam periuk. Bila mendidih bubuh sedikit garam dan olive oil. Masukkan fettuccine. Bila sudah masak, keluarkan & tos.

2. Tumis bawang yg di hiris, bila sudah layu masukkan daging cincang dan gaul hingga daging masak.

3. Kemudian masukkan sos pasta, gaul rata. Masukkan sos chilli, gaul rata.

4. Masukkan fettuccine yg sudah direbus tadi dan gaul rata. Bubuh garam jika perlu.

5. Siap dihidangkan...last jgn lupa tabur parmesan cheese, baru ada kick....

Salaam semua, hari ini menu kat rumah ialah Pizza....my girls suka sgt dgn pizza so i ikut resepi Kak Hanieliza....

Bahan untuk Pizza
500 tepung gandum ]
1 paket yeast mauripan ] gaul rata
2 s/b gula ]
1 s/k garam ]
3 s/b majerin/ atau shortening
1 cawan air suam
1 biji telur

cara:
1. Gaul rata semua bahan sehingga betul2 lembut.
2. Tudungkan adunan dgn kain lembab sehingga adunan naik 2 x ganda.
3. Tumbukkan adunan (untuk mengilangkan angin) dan bahagikan adunan kpd beberapa ketulan.
4. Bulatkan adunan dan leperkan mengikut besar yang dikehendakki.
5. Biarkan adunan naik sedikit (lebih kurang 15 minit) dan bakar dalam oven yang telah dipanaskan 180 C selama 10 minit.
6. Keluarkan dan taburkan bahan yang disediakan...ikut pilihan yang disukai.
7. Bakar lagi sehingga nampak keju mozzarella cair.

INTI PIZZA
bahan
2 ketul dada ayam atau 250 gm daging kisar
1 bawang besar
2 ulas bawang putih
1 biji capsicum kecil
3 keping nanas -
1 cawan cendawan butang [belah 4]
2 biji tomato
100 gm parutan keju mozzarella
1 s/b minyak
3 s/b cili sos [jika nak pedas..tambahkan cili mesin]
1 cawan tomato sos
1 s/k serbuk daun aregano
garam

cara
1. Potong dadu semua bahan.
2. Tumis bawang besar dan bawang putih hingga layu.
3. Masukkan ayam dan tambahkan garam serta daun aregano, tomato sos dan cili sos.
4. Kacau hingga ayam empuk. Biarkan sehingga pekat.
5. Ratakan inti atas doh yang sudah di sapukan tomato sos.
6. Aturkan tomato, capsicum, cendawan, nanas dan sedikit keju di atas ayam.
7. Bakar hingga masak dalam suhu 180'C
8. Taburkan lebihan keju dan bakar sekejap hingga keju cair
9. Hidangkan.
